Hippie in the Kitchen: Peanut Butter Granola

There are many ways to begin a good evening…my approach tonight was to make a phone call to my mother that started with the question: “Can you read me the recipe for your peanut butter granola?” and ended with this reply: “Check the church cookbook.”

As one of the family’s favorite carryovers from our parents’ Jesus hippie days, I grew up thinking this was a time-intensive recipe for special occasions. It’s actually a very quick and simple way to impress friends and neighbors with the start of your own “granola and celery” phase.

Peanut Butter Granola

5 ½ c. oats

½ c. wheat germ or bran

½ c. sunflower seeds

2 ½ tsp. oil

½ c. honey

½ c. peanut butter (crunchy is best!)

½ tsp. vanilla

Mix the oats, wheat germ, and sunflower seeds in a 9” x 13” pan. In a small saucepan, slowly heat the oil and honey. When the mixture is runny, add peanut butter and vanilla to saucepan; stir until blended. Pour wet ingredients over the dry oat mixture and mix with a spoon and/or your hands. Bake at 300 degrees  (F) for 20-30 minutes, stirring every 10 minutes. Let cool and store in an airtight container.

*Feel free to be creative with the recipe–tonight I did 1/2 honey and 1/2 jelly for “pb & j granola.” I also added chopped almonds since I didn’t have any wheat germ or sunflower seeds–not substitutions, just making do!

When you find out your role in the project is…to be thrown under the bus.

When you find out you’ll be babysitting visitors who print their emails so they can read them with a magnifying glass.

When the hotel contract has become a looming monster of doom….again.

When you can’t choose between waving the white flag of surrender or letting the next person who stops by your desk deal with talking end of a flamethrower.

Those days, it helps to have least one thing in your corner—even if it’s just a tube of Revlon.
